What is Xylitol (Birch sugar)?

Xylitol is found as a natural sugar alcohol in many vegetables, fruits and the bark of various trees. Our birch sugar is made exclusively from birch and beech wood from Scandinavia. Xylitol is extracted via the wood sugar (xylose) in a very complex way. Finely cut wood is mixed with water. The wood-water mixture is then purified and filtered until all other substances are completely separated from the xylitol.

Uses

Due to its sweet taste, Xylitol is an easy sugar substitute. When a recipe calls for 100 grams of sugar, you can replace it 1-to-1 with 100 grams of Xylitol birch sugar. So there is no need to convert anything. When used in personal care products, you need to grind it into a powder first.

Birch sugar as a natural sweetener is suitable for diabetics

Birch sugar is almost as sweet as sugar. It has slightly less sweetening power than the well-known refined (white) table sugar but only slightly affects blood sugar levels. So this sugar is quite suitable for diabetics, as its glycaemic value is only 7. Moreover, it contains far fewer calories than refined sugar.
