Thai Tomato Soup with Lemongrass

Are you having a cosy dinner party at home soon or do you just want to make a tasty dish for the family? Then check out this recipe for a Thai tomato soup with lemongrass. The recipe is easy to make and it is full of rich flavours, with a fine aroma!

Ingredients for 4 people

  • 800 grams diced tomatoes (2 cans of 200 grams)
  • 400 ml coconut milk
  • 400 ml of water
  • 1/2 teaspoon of powdered lemongrass
  • 4 shallots
  • 3 cloves of garlic
  • piece of fresh ginger (about 3 centimetres)
  • 3.5 teaspoons of green curry herb paste
  • Fresh coriander or parsley

Preparation Method

Chop the shallots, ginger and garlic very finely and fry this for a few minutes in some oil. Add the green curry spice paste to the pan and fry briefly.

Then add the diced tomatoes, coconut milk, water and powdered lemongrass and simmer for about 20-25 minutes. Puree the soup with a hand blender or in a blender. Garnish with some sprigs of fresh coriander or parsley.
