Use of dill tops

Recipe soup with dill and cumin for 4 people

  • 500 grams of boiled beetroot
  • 500 grams sweet potato
  • 1 tbsp cumin
  • dill

  • 700 millilitres stock
  • 400 millilitres water
  • coarse sea salt
  • 2 tablespoons olive oil


Chop the beetroot in large pieces and the sweet potato in small cubes. Mix with 2 tablespoons of oil, the cumin and some salt and pepper. Fry the onions on low heat in a large pan with some salt. Add the sweet potato and fry for 5 minutes. Stir well with a spatula or wooden spoon. Add the beetroot and fry for another 2 minutes. Add the stock and water and cook on low heat until the sweet potato is done. Puree the mixture with a hand blender and serve in bowls with a little coarse sea salt and a good deal of dill.
