Where does star anise come from?

Star anise (Illicium verum) is very similar in flavour to anise (Pimpinella anisum). However, it is not an herb like anise. Star anise seeds are fruit of a tree that originally grows in Vietnam and South-West China, but is nowadays cultivated throughout almost all of Asia. Star anise has a sweet, warm liquorice-like flavour. This is caused by the substance Anethol, which is also found in aniseed and fennel.

What can you do with aniseed?

Star anise is known for its liquorice aroma. You find star anise therefore in many candy from around the world, as an alternative to anise. In Asia it is an important ingredient of masala chai (India) and five-spice powder (China). Anise is also often used in liqueurs, especially Galliano. Star anise enhances the flavour of meat. The taste of the fruit is fuller and firmer than the taste of the aniseed plant. In the Netherlands, it is still tradition to serve guests with star anise seeds on a buttered Zwieback (Zwieback with mice) to celebrate the birth of a child.
