Masala: the best way to spice up your curries

Curry is a delicious, fragrant dish that can be made with many different masalas. If you want to add some spice to your dishes, a masala is the perfect way to do it! We have different types of masala mixes, each with their own unique flavour profile. Whether you want to make a spicy Indian curry or a mild Thai red curry, we have it for you!

But first... What is a masala?

You can't buy curry powder from us, no, you can buy masala from us. Masala is a term used to describe a mixture of spices. The word masala simply means spice in Hindi. There are many different kinds of masala, each with its own unique blend of spices. Some masalas are very popular in India, such as Garam masala or masala with curry Madras spices. In the UK, Tikka Masala is very popular. However, this is not a masala as such, but a whole dish, usually with chicken. For example, garam masala spices are used in tikka masala.

You can make curry with many different spices. However, there are some common curry spices that are used in most masalas, such as:

  • turmeric
  • cumin
  • coriander
  • fenugreek
  • ginger
  • chilli

When it comes to curry, there are many different options to choose from. Whether you like it mild or spicy, there is a masala for exactly the curry you want:

  • Our standard masala contains the usual Indian spices mentioned above and garlic, onion, mustard seed, cane sugar and sea salt. This masala is a great option for those who like their food with a little spice.
  • For those who prefer a milder taste, the Mild Indian Masala is a good option to try. This blend contains the usual spices and aniseed, caraway, cinnamon, lovage, mustard seed and nutmeg.
  • Spicy Indian Masala is for those who want steam coming out of their ears. It contains the standard spices and mustard, paprika, anise, nutmeg, cinnamon, pepper, garlic, raw cane sugar, allspice, onion and caraway.
  • Colour can affect how food looks. The mild Thai Red Curry Masala is also mild in flavour, just like the mild Indian version, but this masala contains red curry spices such as paprika powder. With these you can make a Thai curry paste that gives your curry a distinctive red colour!

Curry is one of the most versatile dishes you can make. You can use any number of curry spices to make masala with a unique flavour that suits your meal perfectly. But to get you started, you can try our fine organic masalas and see where your preferences lie.

Different ways of preparation

In India, the word "curry" refers to a wide variety of dishes. The basis of most curries is a mixture of spices called masala. In western kitchens one often refers to a curry herbs mix or curry spice blend.

"Curry powder" is a Western invention. Curry powder is also a mixture of spices, including turmeric, cumin, coriander, and chilli pepper. In fact, curry powder is therefore an individual type of masala. But there is another important difference. The usage differs.

In Western cuisine, curry powder is usually added to a dish towards the end of the cooking time. Indian curries are cooked longer and the masala is added at the beginning of the cooking process. This allows the spices to mix and creates a more complex flavour. Although curry powder and curry are sometimes used interchangeably, they are not the same thing. If you want to make a dish with an authentic Indian flavour, it is best to use masala the Indian way.

This is how you use masala powder in an Indian curry!

When it comes to Indian cuisine, masala powder is an indispensable ingredient. Masalas can be used to make a variety of curries, ranging from mild to fiery hot. For beginners in cooking with this powder, here is a quick guide on how to use it in your next curry dish!

To start, heat some oil in a pan over medium-high heat. Then add the masala spices to the pan and fry for a minute or so. This will release the aromas and flavour of the spice. Then add the remaining ingredients (such as vegetables, meat or tofu) to the pan and fry until everything is cooked. Finally, season the curry with salt, pepper and other spices as desired. Serve warm with rice or naan bread on the side. Enjoy your meal!

  2. Let simmer for 15 minutes.
  3. Serve over rice or noodles.
