Extraction of Tonka Beans

After the seeds are harvested, they are dried and soaked in alcohol or rum for 24 hours. Tonka beans soaked in rum impart a flavor of vanilla, almond and rum. This makes them a perfect flavoring for desserts and pastries. After the alcohol is added, the beans are dried again and a fermentation process takes place.

Tonka bean applications

Tonka beans are used as a vanilla substitute in desserts, dessert garnish (ganache), caramel confectionery, ice cream or pastries. They have a pleasant and by some described as 'hypnotic' fragrance and are therefore widely used in the perfume and tobacco industries. However, because of the presence of the substance coumarin in tonka beans, they are not used on a large scale and in large quantities in the food industry. Coumarin is toxic for your liver, among other things, but according to the European Food Safety Authority (EFSA) you would have to eat about 2400 plates of desserts containing tonka beans before you would be in danger of ingesting too much coumarin (0.1mg/kg per day).
