Mustard seeds contain sinalbin, the substance that gives mustard its sharp taste. But yellow mustard seeds contain less sinalbin than black mustard, which is why mustards made from yellow mustard seeds tend to have a mild flavour.

Mutardu is the ground yellow mustard seed without its skins, this is also called mustard flour.

The uses of Mutardu

Mustard flour can be made with a little cold water. After making it, it is best to then add the mustard within 10 minutes to a hot or cold dish to preserve the flavor.
