The Lion's Mane (Hericium erinaceus)

The Lion's Mane (Hericium erinaceus) can be found in North America, Europe and Asia. The colour of the Lion's Mane is white to light orange. The mushroom can have a diameter of up to 25 centimetres. The Lion's Mane is popular in Chinese cuisine.

Lion's mane or Hericium, contains a variety of biovital substances. It contains all eight essential amino acids. The fruiting body contains 19 free amino acids and numerous micronutrients. With the elements zinc, iron, selenium and germanium it is a natural powerhouse of several important substances.

Lion's Mane contributes to the development of the brain through its regulatory effect during and after a stress response in the brain. Also, the Lion's Mane helps a process called myelination, this process provides the signal transmission by the nerves.

Selenium is an important cell protection factor, the potential of the antiooxidant is high. Many substances such as special cytotoxic fatty acids, phenols (hericenones and vitamin D ergosterol), lectins and antimicrobial substances have been found in Pruikzwam/Lionsmane. A similarity with the values of other edible mushrooms was also found in the number of minerals. Besides high potassium contents (254 mg) and phosphate contents (109 mg), low sodium contents (8 mg) were found in 100 g. The potassium/sodium ratio can thus be considered very favourable.
