What is Maitake?

Maitake is a grey-brown, luxuriant fungus. The spreading parts form an ornamental whole at the foot of trees, usually oaks. The maitake is a native fungus in Japan and North America, but in our country you can also sometimes find it in the woods in summer.

Some maitake mushrooms can weigh up to twenty kilos. This high yield and its delicious, aromatic taste make the maitake one of the most popular fungi in Japanese cuisine. What is the best way to use maitake?

The whole mushroom is often added to soups, sauces or hot tea. The dried mushroom is used to make powder. This powder can easily be mixed with other vegetables to make a vitamin-rich protein smoothie. Maitake powder also works well in shakes. The mushroom flavour gives the drink that extra something, and you can enjoy a tasty smoothie in both summer and winter. Of course, the powder can also be added to hot dishes. For example, you can make a delicious quiche with maitake, or a tasty hot oven dish.

Beta-glucans are versatile dietary fibres with special 1,3-1,6 compounds.  In maitake the special maitake D-fraction is found. This is a concentrated beta-glucan. The discoverer of this ingredient was a scientific team led by Prof. L. A further important ingredient of the fungus is the powerful antioxidant L-ergothionein. Furthermore, we find ergosterol, funisterol, octadecanoic acid, various phospholipids, vitamin B2 and C, the minerals copper, potassium, magnesium and calcium, amino acids and the enzyme prolyl aminopeptidase in the mushroom.
