Spruce-needle tea is made from needles of the Picea Abies, or Spruce tree. The Spruce is a needle tree and occurs naturally on dry and usually infertile soils in the entire northern hemisphere. The pine needles are collected in the summer and dried in the air.
Needle tea has been drunk for a long time. The history of needle tea goes back to the European settlers who arrived in America. They suffered from scurvy due to a lack of vitamin C on their long trip overseas and the Native Americans introduced pine needle tea to them.Spruce needle tea is perfect to combine with herbs such as star anise, thyme, echinacea, eucalyptus and mint. Or with flowers like camomile, lavender or chrysanthemum.

Making spruce needle tea is easy: you only need the needles and a filter. Just follow simple the steps below to make it:
- Rinse the needles with water
- Slightly bruise the needles.
- Put about 4.5 grams of needles into a tea filter/infuser. If it doesn't fit, cut them in half.
- Place the filter in a cup
- Pour in recently boiled (filtered) water that has a temperatur of about 60-70 degrees celcius.
- Keep it for 7-10 minutes (the longer you let it steep, the stronger the taste will be).
Do not boil the needles, this ensures that the vitamin C disappears and that is a shame.
Spruce Needle Iced Tea
Vitamin C degrades at temperatures above 30 degrees, but this happens quite gradually. You can also soak the pine needles in water at 30 degrees for an hour to make "iced tea". That way you fully preserve the good qualities in the needles. Use preferably filtered or spring water.
