The origins of the strawberry

The strawberry originally comes from North and South America. In the middle of the 18th century, the strawberry came to Europe. The garden strawberry (Fragaria ananassa) is a hybrid which originated by crossing two American species: Fragaria virginiana and Fragaria chiloensis. Strawberries are rich in vitamin C, with 64 mg per 100 g. Because strawberries have a strong smell, they can be used as flavour enhancers in everything from yoghurt to ice cream.

It is, in a sense, an ice-cream based preservation technique. The product is first frozen at a temperature of between -50 and -80 degrees Celsius, so that ice crystals are formed. Then the product is sucked under vacuum. Next, the product is heated slowly under vacuum. The ice crystals would melt again if there were no vacuum, but the vacuum causes the moisture to evaporate immediately (sublimation). The fruit is further dehydrated until all moisture is removed. Dehydrated strawberry remains, but with retention of all its nutritional benefits. In addition, the shelf life of the product is considerably extended. For this reason, freeze-dried fruit is preferred. Finally, the remaining material is ground into a fine powder.

You can use the powder to add colour to smoothies, yoghurt, ice cream and other baking dishes. Freeze-dried strawberry powder is also excellent as a natural, healthy colouring.
