History of Thyme
Thyme (thymus vulgaris) is a plant native to the Levant and was used by the ancient Egyptians in embalming their dead. The ancient Greeks saw in thyme a source of courage and used it in their temples as an incense. The Romans spread the use of thyme throughout Europe. Cheeses and liqueurs were flavored with thyme. In the Middle Ages, thyme was again attributed with properties that promote courage and people slept with thyme under the pillow to promote a peaceful sleep and prevent nightmares.
The plant is an annual shrub and can grow up to forty centimeters high. The flowering period of thyme is from May to October. The thyme leaves are removed from their stems and then dried with hot air. Then the dried thyme is ground into powder.
