In Muscovado sugar is about 10-15 percent molasses.
This ancient sugar is soft, but also moist and lumpy. Molasses comes from sugar juice that is boiled for a long time and then stirred into a thicker, syrupy mass. After the molasses is heated further, every trace of residual water evaporates. This produces the smooth, rich flavour of malt and toffee. In short, muscovado sugar has a unique and tasty character.

Muscovado sugar is ideal for giving hot drinks and meals a sweet but savory flavor. Muscovado is used to sweeten marinades, chutneys and dark sauces.
The sugar is also used in many different hot drinks. Muscovado has a remarkably fresh, slightly bitter and even liquorice-like taste. Brown sugar used to be called the sugar for the 'poor', but nowadays we think otherwise: Muscovado is a luxury product. An advantage compared to white sugar is that Muscovado has hardly been tinkered with.
What does sugar refining involve?
During refining white sugar is produced from sugar beet or sugar cane. Sliced beet or cane is heated, after which the sugar dissolves in water. This raw juice is then boiled until crystals remain from which white sugar is produced. Like other cane sugars, Muscovado is made from sugar cane. The cane is cut, heated and then briefly centrifuged. Molasses is a by-product of centrifugation. It is dark and mushy. While it is removed from other sugars, it is not removed from Muscovado.
